Oatmeal Chocolate Chip Cookies

Who doesn’t love a good old classic oatmeal and chocolate chip cookie? I sure do! In the summer time my desire to bake (or do anything in the kitchen) diminishes significantly. Who wants to be stuck inside when it’s beautiful out and we know winter will be here again before we know it?! But today in Wisconsin it almost feels like fall… and hey, I’m not complaining, better than 90! So it’s a great day to whip up some soft and gooey cookies 🙂

Oatmeal Chocolate Chip Cookies

  • 1/2 cup plus 2 tablespoons of softened butter
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • 3/4 teaspoon baking soda
  • 1 1/2 cup old fashioned oats
  • 6 oz. chocolate chips


  1. Cream together butter and sugars until light and fluffy. Mix in the egg and vanilla. Add the baking soda, slowly add the flour and mix until well combined. Stir in the oats and chocolate chips.
  2. Preheat an oven to 350 degrees. Form dough into 2 tablespoon sized balls and place 2 inches apart on a cookie sheet. Bake for 10-12 minutes or until golden brown on the edges and just set in the center. Note: you would rather slightly undercook these cookies than overcook. Remove from oven and let sit on cookie sheet for 2 minutes before removing to a cooling rack.

Makes approximately 20 cookies
